fiesta cheddar cornbread


well cinco de mayo has passed, but i can still share the few things we experimented with! we made guacamole, salsa, chips, bean dip, chili popcorn, etc! this particular recipe was inspired by a "fiesta corn bread" containing red peppers and jalapeƱos. we altered the recipe a little by cheating (yay for boxed!) and and substituting a few ingredients...

half a green pepper


an equal amount of corn

 we started getting a little creative...
 
sprinkle in as much as you'd like
  
this all might have had something to do with the mezcal
 
pour into a greased casserole dish and bake at low heat

what feels like 300 hours later, voila!
