well cinco de mayo has passed, but i can still share the few things we experimented with! we made guacamole, salsa, chips, bean dip, chili popcorn, etc! this particular recipe was inspired by a "fiesta corn bread" containing red peppers and jalapeƱos. we altered the recipe a little by cheating (yay for boxed!) and and substituting a few ingredients...

sprinkle in as much as you'd like |
this all might have had something to do with the mezcal |
pour into a greased casserole dish and bake at low heat |
what feels like 300 hours later, voila! |
